This morning my husband requested Blueberry Pancakes for breakfast. I make these frequently and tend to just use a bisquick mix to be quick in the morning but I'm always disappointed by texture and lack of fluffiness. So this morning after reading through multiple recipes I decided to try my own with what I had in my fridge. They came out lovely and I'm sharing here to remember for the future.
Lemon Blueberry Pancakes
yield 8 large pancakes
1 small container of french vanilla yogurt (I used one of the Tillamook cups)
2/3 cup of milk
1.5 teaspoons of vanilla extract
4 teaspoons of lemon juice
2 eggs beaten
2 cups of flour
5 tablespoons of white sugar
1.25 teaspoons of baking powder
3/4 teaspoons of baking soda
1/8 teaspoon of salt
1.5 cups of fresh or frozen blueberries
Whisk together yogurt, milk, vanilla lemon juice and beaten eggs. Mix until everything is creamy. Add dry ingredients to the wet ingredients. Stir until incorporated but don't over-stir (this keeps the pancakes extra fluffy). Spoon onto the griddle or pan on the stove and then sprinkle 10-15 blueberries onto each pancake (I used frozen berries). I cooked on the griddle at 250 degrees and they took about 5 minutes on each side.

New York Day 22
I shot a beautiful editorial today with a team I really enjoyed. It's the best recipe for success! We started about 10 and finished around 5 so it was a full day for sure.
The highlight of the day was getting to try some of the famous Dominique Ansel Bakery pastries. These were some of the most beautiful and delicious pastries I've tried! The bakery is famous for their cronuts (a cross between a doughnut and croissant), but we went too late and they were all out by 11AM. I sadly don't remember the names of each of these beauties we tried but one of my favorites was the key lime tart, which is the one with the raspberries on top.

New York Day 20
Two shoots today! I love working with beautiful, amazing people. I met this makeup artist who I totally click with and this morning my hair guy canceled last minute and my makeup artist created this amazing hair on her first try ever doing big hair in 30 minutes. The talent here is just insane. And I am so excited to be getting great hair work for my book.
Also, as promised we had to go back to Black Tap to try the killer milkshakes. We were in line for about 2 hours for these bad boys but we heard from others in line that is a relatively short wait. We split a burger first which was again amazing. We got the Texan this time as well, you just can't go wrong with a BBQ burger. For milkshakes we got the cookie and the sweet and salty (second time around for me I probably would have gotten the cotton candy or sour one because I don't like peanut butter THAT much to drink an entire shake). It was such a fun experience though and really fun to have gotten to try a few places on our list. We just got lucky this one was so close!

New York Day 15
Today was a whirlwind. We moved into our new loft and it is stunning. We are right in the heart of Soho on Greene Street. The only downside to this place is that we are on the 6th floor and there is no elevator. Chris earned his plane ticket today for sure by carrying all those bags up 6 stories of stairs!
We went to Black Tap for lunch and got burgers, they were so amazing that I ate half of it before thinking to take a photo. I got the Texan Burger! We got standard milkshakes but are going to go back for the specialty shakes another day.
We got some yummy Italian takeout from Sallugi's which is like 300 feet from our apartment (minus the 6 stories of stairs of course). I have been dying for pasta since we got here, I need to carb load to get up the stairs multiple times each day!

New York Day 12
We found a favorite bagel place down the street from us and that was breakfast this morning. I don't know what they do to their cream cheese but it is so thick and creamy, I've never tasted anything like it. We successfully did our laundry (laundromats scare me) and picked up a prescription this morning too (new insurance plans also scare me).
I had a meeting with another great modeling agency as well as a rep this afternoon and both were a great experience. The modeling agency sent me an amazing faces, the best faces I've had and there seems to be mutual interest with the rep and I. Very exciting. Tomorrow I am shooting 3 models and it will be my first big shooting day. Looks like I will be shooting every day now until we leave and I couldn't be more happy about that! My meeting this afternoon was in West Village and it's the first place I've thought, "now this is nice". I loved the buildings and the apartments all had beautiful doors and trees lining the streets and reminded me of a romantic movie. There was also parking for the people that had cars, the streets were cobblestone and there are cute little bakeries and cafes on each corner. Definitely my favorite area yet.
Most of the photos today are from random cool buildings I found. I am getting less interesting with each post and I'm sorry about that!
